Laboratorios del Gusto
Vino y terruño: es una de las múltiples declinaciones de “alimento y/es territorios”, tema principal del Salone 2010, que se encuentran al leer el calendario de los Laboratorios – otras son: hombres y tierra, historia e identidad, tradición y comida local –, pero es también uno de los principios inspiradores de SlowWine 2011, la nueva guía del vino de Slow Food.
Vino y terruño: es una de las múltiples declinaciones de “alimento y/es territorios”, tema principal del Salone 2010, que se encuentran al leer el calendario de los Laboratorios – otras son: hombres y tierra, historia e identidad, tradición y comida local –, pero es también uno de los principios inspiradores de SlowWine 2011, la nueva guía del vino de Slow Food.
Como siempre, los Laboratorios dedican amplio espacio al tema de los vinos, pero esta vez lo hacen con mayor respiro y libertad, conscientes de que es necesario un nuevo tipo de acercamiento a la cata que nada reste al placer, y que transmita el encanto de este mundo trayendo hasta Turín a sus protagonistas.
Así se pueden conocer personalmente a muchos productores; se exploran territorios del vino con la ayuda de agrónomos, enólogos, biólogos que a través de la tierra, las uvas típicas y la historia puedan transmitir el sentido del vino, dar una visión global de una botella.
Y mucho más: desde las mejores cervezas belgas hasta los Champagnes, los ciclos de catas dedicados uno de ellos a la alta mixologia (grandes bármanes de todo el mundo para contarnos la historia de la bella sociedad), el otro a cómo se alimentan las grandes ciudades europeas (París, Berlín, Milán) que todavía albergan a excelentes artesanos y especialidades, con invitados inesperados.
Finalmente, los Laboratorios, que tienen como protagonistas a Terra Madre, con las comunidades del alimento, y la Universidad de Ciencias Gastronómicas que saca a la palestra a sus neo-gastrónomos.

Para los Laboratorios del Gusto hay que reservar previamente.
Algunos laboratorios (indicado por ) quedan reservados para los socios de Slow Food.
Se garantiza la traducción simultánea al italiano y al inglés.
Los no-socios Slow Food que reserven y paguen en pre-venta plaza para al menos una cita en el ámbito del Salone (Laboratorios del Gusto, Teatro del Gusto, Encuentros con el Autor) tendrán un descuento del 20% sobre el precio de la entrada (16 €), presentándose con la carta de confirmación en la billetaría de Lingotto dedicada a los eventos bajo reserva previa. El descuento no es válido para la compra de entradas on-line.
Eventos previa reserva
Las plazas disponibles para las citas de pago del Salone del Gusto (Laboratorios del Gusto, Teatro del Gusto, Encuentros con el Autor y Cenas Programadas) y la entrada a la sala Slow Wine-Banca del Vino dentro de la Enoteca son limitadas, por lo cual es indispensabile reservar: inscríbete hasta el 10 de octubre y se te enviará una confirmación de reserva que dará validez a la inscripción.
Las eventuales cancelaciones serán reembolsadas al 70% si se comunican por correo electrónico a prenotazioni@slowfood.it. hasta el 20 de agosto.
No son válidas las reservas ni cancelaciones realizadas por teléfono.
Durante el Salone será posible inscribirse directamente en las eventuales plazas vacantes dirigiéndose, entre el 21 y el 25 de octubre, a la Recepción de Eventos (Lingotto Fiere, pabellón Oval).
Para acceder a todas las citas es necesario estar en posesión de la entrada al Salone del Gusto.
